Chutney Roisti with Goat Cheese
Makes: 6 servings

What you need:
6 ounces of Goat Cheese
6 teaspoons of any Major Craig’s Chutney
(your choice but I use A Date With Cranberry)
4 large russet potatoes
1 tablespoon of butter
1 teaspoon sea salt
1 teaspoon pepper
cooking oil
How to put it all together:
Peel potatoes and grate using a coarse grater
Mix with sea salt and let sit for 10min to draw out
water from the potato. Wrap potato
in a clean tea towel and squeeze out excess water.
Toss potatoes with a little clarified butter and pepper.
Heat cooking oil in a hot frying pan.
Form a small ‘Pancake’ in the palm of your hand with the
potato and press.
Use a spatula and place the pancake in the hot oil
Cook until the bottom is golden brown and crisp
Very carefully flip the pancake with a spatula
Cook until brown and remove. Cool on a paper napkin and
repeat the process. Make several.
Pre-heat you oven to 325F
In a greased baking dish, spread out pancakes evenly
leaving out half of the batch as tops.
Spoon on goat cheese and Major Craig’s chutney onto each
and cover with a top rosti potato.
Bake for 5 minutes until cheese is hot.
Serve with additional chutney.
Extra step: top with a light sprinkle of icing sugar.
